I usually use a Sunday to prep up a bit of food for the week and several clients have been asking me about making something as a post workout snack or something they can just eat as a breakfast on the go……………. So using the following ingredients ………..
1 cup dates (I used mejool)
1.5 cups oats ( I toasted mine for extra flavour)
1 cup nuts ( I used a mix of Brazil, walnut, cashew and hazel)
1/4 cup peanut butter
1/4 cup local honey
3 scoops whey protein ( optional ! I added juice of one lemon with this to loosen the mix)
Blitz the dates in a nutribullet or blender and then pulse in the nuts to your preferred consistency, set aside. I toasted the oats in a dry frying pan for a couple of mins to give an extra bit of flavour, keep your eyes on it though they don’t take long to catch and burn ! I then mixed the oats with the dry protein and set aside. I warmed the honey, peanut butter and lemon juice over a low heat to melt it. I added all the ingredients together and mixed ! Use your hands to form the individual balls, the mixture will make about 10-12 balls depending on how big you like them. I popped them in the fridge to become firm, I’ll have them in the week as a post workout snack or for breakfast on the go…………you can also store them in the freezer and they last for ever !
This is a basic formula and the skies the limit with regards the flavour, also you can leave out the honey if you think it’s too sweet or you want to reduce the sugar content, you might just need to add a couple teaspoons of water to soften the mix a bit !
Try using different nut butters, coconut, different nuts and dried fruit instead of the dates, mix it up and suit your own taste buds !
